No-carb cheese “crackers”

These “crackers” are delicious and contain no starchy carbs, but they come with a caution. Anytime we remove a food or food group from our plan, we replace it with something else. In creating a “cracker” to replace the starchy carbs that are saltines, we can exclude all the carbs, but we end up with a concentration of saturated fat and sodium. As a result, this is a “meals with adjustments” item, and we would definitely urge limiting quantities if you’re a heart patient.

Would it be easier to simply use saltines and keep the quantity very limited? Probably. But we offer this recipe as an alternative, particularly for those diabetic patients who have made a “low carb/healthy fats” approach a centerpiece of their eating plan.

  1. Preheat oven to 375 degrees.
  2. Put all the ingredients into a nonstick saucepan and heat slowly over low heat, stirring occasionally until it forms a dough (about 15 minutes).
  3. Meanwhile, prepare 2 cookie sheets and a cooling rack. Lay out 2 pieces of parchment paper and cover both cookie sheets with 2 more pieces.
  4. Put half the dough on a piece of parchment paper and lay another parchment paper on top. Roll the dough out until thin, about 10 by 14 inches (but it doesn’t have to be square or exact).
  5. Remove the top sheet of parchment and set aside. Use a pizza cutter to cut the dough into squares. Put the squares on one of the parchment covered cookie sheets, with a little space in between. They probably won’t all fit, so put the ones that don’t fit on the second cookie sheet.
  6. Put the first cookie sheet in the oven and bake for 8-9 minutes, until tops are lightly browned and edges are starting to darken. Remove from oven and immediately slide the parchment with the crackers onto the cooling rack.
  7. Repeat the previous 3 steps with the second half of the dough, baking and cooling the second and third cookie sheets of crackers in the same manner.
  8. After the oven and cookie sheets have cooled, return it to 175 degrees and spread the crackers on one or two racks over a cookie sheet. Sprinkle them with Bensons Table Tasty and return them to the warm oven to become more crisp.
