Turkey burgers
This recipe makes enough for three burgers. The nutritional information does not include a bun or condiments.

Instructions
  1. Start by finely chopping the onion, celery, carrots and mushrooms, and set aside.
  2. Heat about half of the olive oil in a skillet over medium heat. When hot, add the onions, cook until translucent, then add celery and carrots. After they soften slightly, mix in the mushrooms.
  3. Saute the vegetables slowly, stirring occasionally, about 15 minutes until brown. Set aside to cool.
  4. Put the ground turkey in a bowl and add the rest of the olive oil. Mix well so the oil is absorbed into the meat. Add the vegetable mix to the turkey and mix well. If using optional no-sodium blend, you can add that to the turkey mixture or sprinkle on the burgers as they cook.
  5. Form 3 or more patties, depending on your preferred size and thickness. Cook in a skillet over medium heat until cooked through and browned.
Recipe Notes

Turkey burgers can be served on a bun, if bread is part of your eating plan, with your choice of tomato, lettuce and onion. Or, if not using bread,  top with sautéed onions and mushrooms, green peppers or other favorite vegetables.
